I've only recently discovered that rice flour is good for external crunch (I am evolving a killer oven chip recipe), but does it bind things like meat patties the same way wheat flour does?

Never used flour in patties, sorry! I bind them with one-minute oats and egg.

it does, but use it sparingly. I find that egg and a sprinkling of rice flour does the trick. If you're trying to avoid gluten, oats may not be the best, as the jury is still out on them.

We've got one of those old tupperware hamburger makers, and it's great for doing patties and things.
