This evening I made potato, garlic and chive pancakes, which were suitably white and pale green to conform to my new eating rules. The activity was notable for several reasons:
* I used a cup of flour.
I even sifted it. I can't recall the last time I used a cup of flour in an actual cook-from-scratch situation, but I was surprised how simple it was. It's becoming increasingly apparent that my dependence on prepared meal bases and various commerical products was the result of a learned helplessness as well as a dependence on convenience. Evil food manufacturers.
* I learned what happens when you buy a cheap food processor.
It does not munge raw potato to a suitable consistency. Not surprising really, it's just an attachment to a stick wizz thing, but I'd half hoped I could cheat and not buy an extra machine. I was in no mood to add to my hand injuries by grating potato the old fashioned way after a severe practice drought. The stick wizz thing isn't bad though.
And the pancakes? Appalling, doughy, but mine ;-)
